I have finally emerged from a pile of paperwork and mountain of schoolwork! There really isn't anything interesting at all to report about finals, papers, and paperwork so I will skip over that. This weekend I went on the Duke of Edinburgh Adventurous Journey with my Miss Colorado sisters! I really enjoyed the bonding and team building activities. It was my first time visiting Estes Park and Rocky Mountain National Park. It was gorgeous and at 89 degrees, it finally felt like summer. On the long drive home, I kept thinking that I would need to do homework once I returned home... but I have no homework for the summer! In my spare time so far I've watched two animated children's films that have been on my list for a while: The Incredibles and Cars. They were both adorable! I have a huge list of books to read this summer and I'm starting with a rather random choice (interestingly enough, it is a children's book) Gathering Blue by Lois Lowry. To celebrate the end of the semester, I impulsively bought this adorable London notebook that I have absolutely no purpose for yet. I journal and write all of the time so I will make use of it eventually! Speaking of London, Coldplay's new album comes out tomorrow! (Of course, I've probably already told you that.) I tried to make a list of my top five favorite songs in honor of the album release, but that took too much mental effort for tonight! On a totally unrelated note, Colorado Springs is getting a Trader Joe's next year. Until today, I had only ever been to a Trader Joe's once, in Boston when I had no refrigeration so I only bought peanut butter cups that I ended up eating when I randomly woke up at 4:30 AM. Anyway, I drove past the one in Denver today so I stopped to see what we have to look forward to when it opens in Colorado Springs. It was much cheaper than Whole Foods and had lots of neat things like green tea mints, Parisian carrots, and edamame guacamole. Key Lime Greek YogurtI recently purchased ten key limes for a dollar. Since I didn't know what else to do with them besides put them in water, I attempted to make homemade key lime Greek yogurt and was actually successful! Ingredients: 1 cup vanilla Greek yogurt 2 key limes 1/4 cup almond milk Squeeze the juice of the limes into a container and mix with almond milk. Slowly stir in the yogurt and let sit overnight. It made me crave a trip to Sanibel Island!
