Matcha Coconut Oatcakes Recipe

The Colorado weather never ceases to surprise.  We've had thunderstorms/ hailstorms everyday since Wednesday. On Wednesday, I emerged from the north end of Colorado Springs to see a dark, turbulent sky.  I knew there were tornado warnings and even funnel clouds spotted in Denver and it certainly looked like there was a possibility of a tornado in the Springs.  I decided to try to make it home quickly before the storm started.  Not even five minutes into my journey, I was assaulted by golf ball-size hail and high winds.  Along with other cars, I had to pull over under a bridge and wait out the storm.  All the while, I was on the phone with my dad, asking him to check the weather to see if there was a tornado in Colorado Springs.  It was slightly terrifying! Well, at least it isn't snowing anymore!

That is some of the hail that accumulated along the highway during the hailstorm. 

One of the perks of not having schoolwork is more time for recipe experimentation.  The most recent blog-worthy recipe includes both matcha green tea, oatmeal, and coconut.

Matcha Coconut Oatcakes

Ingredients:
1/4 cup quick oats
1/2 cup coconut milk
1/2 banana
1 TBSP sweetened matcha green tea
2 TBSP coconut flour
coconut shavings or chocolate chips (optional)

-Combine the oats, milk, banana, matcha, and coconut flour in a blender to make the batter.
-Grease a skillet and heat.
-Drop 1/4 cup sized scoops of the batter on the skillet.  Warm until browned and then flip.
-Remove and apply desired toppings.

One year ago was one of the most exciting weeks of my life.  It began with the Of Monsters and Men and Vampire Weekend concert at Red Rocks and ended with a trip to Europe!  At this time last year, I was spending my first day in London!
