Completely irrelevant to the rest of the post is my re-telling of the bizarre, crazy dream I had last night! I have bizarre dreams almost every night. Last night I dreamt that I was in the Hunger Games. All of the tributes were students from my astronomy class and the game was set on a transatlantic flight. Anyone who lasted until the flight landed won the game. I was one of eight tributes to make it to the landing. One of the signs of a good book or movie is one that incorporates itself into my dreams! As I said in my last post, I felt quite proud of my recent culinary success until I realized that 90% of it is baked oatmeal. Not that there is anything wrong with that, except when I go on Pinterest instead of doing my homework. I still don't know what to do with myself now that the Olympics are over. I was on such a routine of watching the Olympics and doing homework during the commercials. I have filled the Olympic void with Pinterest; the only problem is that Pinterest does not have any commercial breaks, hence my wasting countless hours pinning baked oatmeal recipes. At least I actually try them! As someone who used to make Amy's Kitchen frozen dinners for each meal, this is a great culinary accomplishment! The second time (pictured) I added banana and raisins. ![]() Carrot Cake Baked Oatmeal, inspired by: http://www.theoatmealartist.com/2012/07/carrot-cake-oatmeal.html. I omitted the ginger and molasses and put it in my ramekin instead of baking it stovetop. Ingredients: 1 Packet Quaker Cinnamon and Spice Instant Oatmeal 1/4 cup almond milk 1/4 cup raisins 1/4 cup chopped carrots Directions: Mix all ingredients and place in a ramekin. Bake at 350 for approximately 20 minutes. ![]() Banana Split Baked Oatmeal, inspired by: http://www.theoatmealartist.com/2012/07/banana-split-oatmeal.html. I skipped cocoa powder and used chocolate chips instead and baked it instead of cooking it stovetop. I also made Key Lime Pie Overnight Oats for dinner: http://www.theoatmealartist.com/2013/05/key-lime-pie-overnight-oatmeal.html It was my favorite overnight oats recipe so far! Ingredients: 1/2 cup rolled oats 1/3 cup almond milk 1/3 cup chopped strawberries (I used frozen) 1/3 cup diced pineapple (I used frozen) 1/2 banana sliced 1 TBL dark chocolate chips Directions: Mix all ingredients and place in a ramekin. Instead I made Lauren's famous banana bread stovetop. She correctly predicted that I would love it! Have you ever tried baked oatmeal or overnight oats? Do you prefer them to stovetop?

Baked oatmeal is amazing! I highly recommend any of The Oatmeal Artist's recipes, especially pumpkin pie and strawberry banana!
