What's Up Wednesday? Well, I failed to blog yesterday after returning home from astronomy lab after 11 PM. Also, I found out that the American Modernism paper I thought was due next Tuesday, is actually due tomorrow. It's six pages and I haven't started it yet... I think I still need another week of spring break to get some homework done! I also need to do some spring cleaning. I was in Denver for a Miss Colorado workshop over the weekend and have yet to unpack. The workshop itself was great and I am so excited to continue on my journey to the Miss Colorado stage this June! My lone complaint from the weekend was that the hotel's stairs were for emergency purposes only so I had to take the elevator multiple times per day. I was going to mention my hatred of elevators at check out, but the front desk worker was British so I decided against it! After the workshop, I went to the American Girl store! I re-lived my childhood admiring the book series I used to love. I was surprised at how many new characters they've created since my American Girl days. I owned Samantha and Molly dolls, but sadly neither had their own display. Afterwards, I went to the Disney Store and later dined at Sweet Tomatoes by myself. I noticed that most people go to salad bar style restaurants in a group, but I had plenty of vegetarian fare to keep me company! Also, I did not achieve my goal of finishing That Hideous Strength over spring break. I think I'm at 91% on my Kindle, but my schoolwork is interfering. Here are some recent culinary successes that do not involve melting plastic to my burner! Clockwise from top left is a matcha green tea latte. Top center is a salad with olives and beets. Top right is a salad with goat cheese, a black bean patty, and more beets. I've been obsessed with Love Beets, partially because they're imported from the UK! Bottom right are two sprouted corn tortillas with scrambled eggs and queso con salsa. Bottom left is my first attempt at a poached egg on top of a multigrain waffle. And lastly is a steamed yam topped with coconut oil and peanut butter and a side of some steamed broccoli and cauliflower also topped with coconut oil.

Another one of my favorite places in Colorado Springs is the Melting Pot. Fondue gives everyone an excuse to play with their food! I took photos of the vegetarian dippers (asparagus, tofu, mushrooms, artichokes, and cheese ravioli), the Yin and Yang chocolate, the dessert dippers, and the Flaming Turtle chocolate fondue as it is, well, flaming!
I nearly forgot about two more items under "What's Up Wednesday!" First, I have officially applied for my study abroad program to London and should hear back within a few days! Secondly, after three weeks of pairs lessons I took my first "pairs fall" today. Ice is much harder when you're being thrown rather than falling on your own! I'm going to have a nice bruise tomorrow!
